FETA + HERB CRUSTED SALMON

INGREDIENTS : 

  • 12 oz salmon filet

  • 1 cup feta cheese

  • 1 tbsp fresh parsley

  • 1/2 tsp fresh lemon juice 

  • 1 tsp capers

  • 3 tsp julienne sun-dried tomatos 

  • 3 tbsp olive oil 

  • 4 tbsp water

  • pinch of salt

  • pinch of pepper

DIRECTIONS : 

  • place skillet over med-high heat, add 2tbsp of olive oil, and allow to coat the bottom of the pan. Allow to heat up to 3 min. Add a pinch of salt and pepper to the salmon. Add salmon to skillet, skin side down. Allow to brown for 3 min on each side. 

  • While salmon is browning, mix feta cheese, lemon juice, sun-dried tomatoes, parsley, 1 tbsp olive oil, a pinch of salt and pepper in a mixing bowl. Add cheese mixture to the top of the salmon. Add water to the skillet and cover and allow to cook for 7 min. 

  • Remove from skillet and enjoy!

SHRIMP + GRITS 

 SHRIMP INGREDIENTS : 

  • 1/3 cup chopped red bell pepper 

  • 1/2 tsp chopped garlic 

  • 1/3 chopped yellow onion 

  • 12oz frozen shrimp ​[ peeled and deveined w/ tails off ]

  • 1 tsp old bay seasoning 

  • 1 tbsp lemon juice  

  • 1/2 tsp garlic powder 

  • 1/2 tsp smoked paprika 

  • 1/2 tbsp red wine vinegar

  • 1 tsp tabasco 

  • 1 tbsp salted butter 

  • garnish w/ fresh micro cilantro [ optional ]

 GRITS INGREDIENTS : 

  • 2 cups chicken broth 

  • 1 cup water 

  • 1 cup heavy cream

  • 1 1/2 cup smoked cheddar 

  • 1/4 cup butter 

  • 1 cup grits 

  • 1/2 tsp garlic powder 

  • 1 tsp smoked paprika 

  • 1 tsp salt

DIRECTIONS : 

  • In a medium saucepan add chicken broth and water to a light boil over medium-high heat 

  • Once the mixture has begun to boil add grits and cover bringing the heat from medium to high. Stir occasionally to prevent sticking 

  • Allow grits to boil for approx. 10 min. on low until they soften. Add butter, cheese, heavy cream, garlic powder, old bay, and salt. Stir together. Cover and set aside

  • To a medium skillet add in bell peppers, onion, and garlic

  • Add shrimp and cook for approx. 6 min until shrimp are fully cooked [ light pink color indicates doneness ]

  • Add vinegar, tabasco, and seasonings

  • Place in a bowl and serve!

FRIED CHICKEN 

FLOUR SEASONING  : 

  • 1 1/2 cups of flour 

  • 1 tbsp salt 

  • 1 tbsp garlic powder 

  • 1 tsp smoked paprika

  • 1 tsp black pepper

  • 1/2 tsp tony's cajun seasoning

CHICKEN SEASONING : 

  • 1 1/2lbs of chicken drumettes 

  • 1 tsp garlic

  • 1 tsp salt 

  • 1 1/2 tsp black pepper 

  • 1 1/2 tsp paprika 

  • 48oz vegetable oil to fry  

DIRECTIONS : 

  • Pour oil into a medium pot and turn onto medium-high heat. Allow to get up to temp between 350 - 375 degrees

  • While waiting on oil to reach the proper temp. Mix together flour mixture in a medium mixing bowl 

  • Rinse chicken, then pat dry. Add seasoning, then add to the flour mixture.

  • Add chicken to oil then allow to cook for 15 min 

  • Remove chicken from oil onto a napkin over a plate to remove excess grease. 

  • Allow to sit then enjoy!
