12 oz salmon filet
1 cup feta cheese
1 tbsp fresh parsley
1/2 tsp fresh lemon juice
1 tsp capers
3 tsp julienne sun-dried tomatos
3 tbsp olive oil
4 tbsp water
pinch of salt
pinch of pepper
Directions: Step-by-Step Success
Place skillet over med-high heat, add 2tbsp of olive oil, and allow to coat the bottom of the pan. Allow to heat up to 3 min. Add a pinch of salt and pepper to the salmon. Add salmon to skillet, skin side down. Allow to brown for 3 min on each side.
While salmon is browning, mix feta cheese, lemon juice, sun-dried tomatoes, parsley, 1 tbsp olive oil, a pinch of salt and pepper in a mixing bowl. Add cheese mixture to the top of the salmon. Add water to the skillet and cover and allow to cook for 7 min.
Remove from skillet and enjoy!
